🛒 INGREDIENTS FOR 4 SERVINGS

  • 100 ml freshly squeezed juice (e.g. mango or papaya from the HUROM juicer)
  • 6 g agar-agar
  • 1–2 tsp sugar (optional)
  • approx. 300 ml neutral, well-chilled sunflower oil

👨‍🍳PREPARATION:

  1. Wash the fruit thoroughly and place it whole into the HUROM juicer — thanks to the gentle technology, no pre-cutting is necessary.
  2. Collect 100 ml of fresh juice and put it in a small pan with agar-agar and sugar.
  3. Bring to a boil while stirring constantly and simmer gently for about 1-2 minutes until the mixture thickens slightly.
  4. Allow to cool briefly — the liquid should still be quite fluid.
  5. Pour into a squeeze bottle or pipette.
  6. Drip into very cold oil. This will create small fruit pearls.
  7. Remove the fruit caviar with a sieve and rinse with cold water.
